Typically Tuesday

So far today has been a Tuesday- not a mundane Monday or a frantic Wednesday- just a Tuesday with a side of salted sunshine. Today I turned my calendar to March 1 and decided my life was now unencumbered by the gray skies of the bleak mid-winter. Spring will officially be here in 19 days but the green is already sprouting in my heart. Tuesday has held nothing surreal or extraordinary for me. Simplistic as Tuesdays can be I appreciate the calm, the love, and the yum of the ordinary elements of life on these days.

Absentee Angry Customer
The Calm: A quiet day at work without any angry customers or impossible feats demanded of me.

The Love: Sitting with my husband in the car on the way to work, in the car on the way to school, at computers blogging and writing, and - soon to come - on our cozy little couch.

The Yum:
Tonight is taco night.
(A Tuesday Aside: My brother Gavin at age 3 wanted to be a taco one night. We allowed him this wish as we sat and played a game of Mafia. He enjoyed being a taco.) Blake and I love taco nights (and Gavin). We aren't on a routine meal schedule so when tacos arrive in our kitchen for a fiesta visit, we welcome them with salivating joy and hungry enthusiasm.
Sunday, I made my first batch of . . . .
                                Fresh Guacamole
1 ripe avacado
1/2 white onion (diced)
1/2 can of Mexican style Rotel with Lime & Cilantro

So, I may have cheated by using the Rotel but it combined 3 of my necessary ingredients and was so conveniently sitting on my pantry shelf that I couldn't resist. I am the sole guacamole muncher in our household, so this was a small batch - just my size. If you decide to try it for more than your singular self, at least double the recipe here.
